Five to seven zucchinis
Two to three mangoes sliced to yield 4 to 5 cups
One third of an avocado
Two to three green onions or scallions
The juice of one to two limes
A handful of cilantro or rosemary
One serrano chile pepper
Here’s what you do:
Using a spiralizer* process the zucchinis into spaghetti noodles. Set aside
Using a VitaMix* or blender, mix together all other ingredients until smooth.
Pour mixture over zucchini noodles and toss with thongs until evenly distributed.
